#1. What is one thing that you wish you had done before now, and will you ever check it off your to-do list?
It's a funny thing about wishes. What I used to wish for, changed when I became a mom. I would have thought that I'd have my Architectural License before kids...and I dreamed of driving by buildings that I'd designed...but that's not all so important now. I may never check it off my list. But, there's a lot of life left after the kids go to college.
#2. If I were taking you out for your dream day of fun where would we go and what would we do?
These days my dream day is pretty simple. Probably start the morning with a brisk walk. When I was pregnant with 5, I worked in the Newport Back Bay. My office was on an ecological reserve and I walked every day during lunch. I'd love to take a long walk there again. I love Balboa Island. There's fun little shops and great places to eat. We'd spend the day there. Maybe ride beach cruisers with cute baskets on the front. End the day watching the sunset from the wedge. The summer I was 20, I lived on the Balboa Peninsula. I'd have a quiet time every Thursday evening and watch the sun go down from the wedge. The places that have meaning to me are places where it's quiet and I can hear God's voice. I'd love to share that.
#3. When you were a kid, what did you want to be when you grew up?
I always thought I wanted to be an architect. And, I am...except without my license I can't write that on a business card. But, I think underneath it all, I dreamed of being a mom. My grandma stayed home with her 3, my mom stayed home with me & D. I always knew that's what I'd want for my little ones. So, a career...not really as important to me as I thought when I was in High School. (Funny story though: In a little book I made in 4th grade for a Mother's Day present...when I described my future, I said I'd marry an architect, have 4 kids, and 6 cats, and 4 horses. So, I'm only 1 kids and a bunch of pets short of my dream)
#4. What's your favorite comfort food, and why?
Cheese! I must be a mouse. I LOVE Bean & Cheese burritos. I think because my mom craved Mexican food when she was pregnant with me. And my grandma's cheesy scalloped potatoes.
G's Cheesy Scalloped Potatoes.
1/2# chedder cheese shredded.
1/2 c. margarine
5T flour
2 1/2 c. milk
1/4 c. minced onion ( I use about 1/2 Maui sweet onion diced and sauted)
1 1/2 t salt
3/4 t. pepper
7 1/2 cups sliced potatoes (1/8" thick...too thick and they won't cook well)
Make white sauce, turn off heat, add cheese, stir until melted.
In a 9x13 pyrex layer sauce, potatoes, onions, potatoes, then top with remaining sauce.
Bake at 350 covered for the first 45 min, then uncover for an additional 15 min.
(The times here are aprox. Every cook/oven is different. And here we use recipes as guidelines not the law. When it's done, the potatoes will be tender to fork, and the cheese will be bubbly goodness.)
Bonus Question: What is the happiest moment (so far) of 2007?
A date with my husband in Wine Country. We were up in Napa visiting my Grandpa, and my mom kept our little ones for the day. M and I visited Domain Chandon and went on a tour, had a wine tasting, and ate lunch. The tour was educational, the wine tasting...well, I'm not so much into wine, but we sat outside next to a little waterfall in the shade for about an hour...and that's a rare event for me. The lunch at E'toile...phenomenal! We sat here...

for 2 1/2 hours. The food was amazing. But for me...it was quiet, and I got to share the moment with M. I felt like a princess. And I found a champagne I liked...

(The best part...it was all free. Comp because M is working on a project for Southern Wine and Spirits. Seriously, it would have been a $250 for 2! As a young family with 3 toddlers, we're not often afforded such luxuries.)

i'll be back with the interview request once the next package is received...! very intersting interview and i can really relate to how things change once kids arrive.
