Ironically, it was just before M lost his job that I found Gayle at The Grocery Cart Challenge. She's started hosting a Frugal Friday recipe swap. I've wanted to post before, but had challenges getting to my computer on a Friday. Yesterday I made something we all really liked. No real recipe. I'm curious if someone else would try it and let me know if they like it.
1# Beef Stew Meat (smallish cubes)
4t. Beef bullion
1t. Cumin
1t. Lemon Pepper
1T. Dried Cilantro
1 can tomatoes (I used Hunt's new Fire Roasted, but I'm sure you could substitute.)
1c. rice
Water
Brown the meat in Dutch Oven or other soup pot. It doesn't need to be brown through, the rest will cook with the rice. Add Spices, Tomatoes, Rice, and Water. (At least 4 cups of water, but you could add more if you wanted this to be more soup than stew.) Bring to a boil, then simmer for 20 minutes for the rice to cook through. Serve with some shredded cheese, sour cream, extra diced onion. I left the onion out when cooking because my kids don't like it, but this would be really good with a diced onion thrown in when the meat is browning.
Seriously. I'd love to know what someone else thinks about this. And I need a name for this recipe too. How many servings would you say this is? It will definitely feed 6 probably with left overs. I know it's a little HOT to be eating soups/stews, but Fall will be here soon. M accidentally thawed the Stew Meat so I had to come up with something. I'm glad my family liked this. Will yours?

You know what? It sounds really good! I will have to come back here in the fall and remember this. It's way too hot here too.
I wonder if ground turkey would be a good substitute for the ground beef?

That does sound good. I'm going to have to try it. Your BYOB is looking great - my Mom is just finishing hers. I'm amazed that the patterns in those magazines could be in the knitting magazines of today!
I have some stew meat in the freezer. I'll try to make this next week and let you know. It does sound really tasty!
